Piononos, white rice and black beans, tomatoes and avocado salad

Puerto Rican Piononos

Sweet and savory plantain rolls!

Ingredients
  

For Plantains

  • 4 ripe plantains, the more ripe the better!
  • 2 eggs, beaten

For Ground Beef (Picadillo)

  • 1 lb ground beef
  • 2 tbsp sofrito
  • 1 tbsp chicken bouillon Better than Bouillon
  • 1/2 cup tomato sauce
  • 1 tsp Adobo
  • 1 tsp Sazón
  • 1/2 tbsp onion powder
  • 1/2 tbsp garlic powder
  • 1/2 tsp ground oregano
  • 1/2 tsp cumin
  • 1/8 tsp ground black pepper
  • 1/2 cup beef or chicken broth

Instructions
 

For Ground Beef (Picadillo)

  • Preheat oven to 375 degrees.
  • Add ground beef to skillet and cook on medium high heat until brown. Drain excess fat. 
  • Add all other ingredients to the skillet. Stir to combine and cook for about 20 minutes on low heat.
  • Add broth or water as needed until potatoes are soft and tender. Remove from heat and set aside.

Assemble Piononos

  • Spray a muffin tin with cooking spray. Mash a small piece of plantain in each muffin cup to form the base of the pionono. Place strips around  to form a cup. 
  • Fill each cup with ground beef and sprinkle with shredded cheese. 
  • Drizzle some egg over each cup to bind everything together.
  • Bake at 375 degrees or until the cheese is melted. Serve with rice and beans and avocado salad.
